Production of soups and sauces for market tests and clinical trials

March 2009 - NIZO food research has now the ability to produce on semi industrial soups and sauces like ketchup and mayonnaise using the newly acquired Limitech © centrifugal mixer and process cooker. The mixer can be used for ingredient replacement tests, recipe development and the production of food grade samples for market tests and clinical trials. Products produced with the mixer can be filled in a large variety of packages.

NIZO food research owns the largest food-grade commercial pilot plant in Europe. This Food Factory can be used for process development, application testing, test productions and tolling of high value ingredients, ranging from all dairy products to sauces, beverages, and powders. It helps industry to have flexible processing facilities for temporary production capacity and to keep test productions out of their own plant. Together with its research facilities NIZO also assists its customers with cost reduction through process optimization.

NIZO continuously improves its offer and recently a centrifugal mixer and process cooker has been added to the long list of facilities. The working volume of the mixer is 125 L, allowing the production of batches ranging from 50 to 100 L. In the mixer, products can be heated (directly or indirectly), vacuumized and intensively mixed and homogenized using the highly effective mixing wheel. In addition it is possible to add (e.g. fruit) pieces to the emulsified base and keep these into solution without damaging them using the independently operated mixing wheel.

The mixer is available on a project base.
