UK Manufacturer Launches Customised Browning Tunnel

Double D Browning Tunnel

March 2009 - Double D Food Engineering, the UK designer and manufacturer of a range of custom-built high impingement cookers and searer/grill markers, has developed a customised Browning Tunnel designed to produce authentic high colour generation simultaneously on all sides of the product being treated, and without the need for coatings or additives.

The Browning Tunnel is part of Double D’s range of Revoband Continuous Cookers, and a 3.5 metre long and 1 metre wide tunnel will be featured at this year’s Anuga on the stand for Emil Müller GmbH & Co, Double D’s agent in Germany.

The tunnel, which can be custom-built to suit any size of operation, delivers controlled hot air to all surfaces of the product. It is particularly effective on cooked ham logs or bombs, turkey saddles and delicatessen products.

“The tunnel can be fully adjusted to colour all surfaces of a product,” says Ian Burns, Double D’s food processing development engineer. “For example, on, say, a 4 x 4 log we can evenly colour all four surfaces. Equally, large oval hams can be browned all the way round.

“Consumers and supermarkets are now demanding 100% natural products from manufacturers wherever possible. The Browning Tunnel gives manufacturers the option of generating exactly the required colour and finish, without having to add external products or additives which are often found in product coatings.”

Double D’s range of Revoband Continuous Cookers have been developed specifically for the further processing of meat and poultry products. The cooker comes with a number of innovative features, including an air flow system which gives dedicated control over both top and bottom heat, and also fan speed, providing an even and consistently cooked product, every time.

The cooker also has a menu driven, touch screen PLC controller, which can be sited remotely from the cooker and password protected for added security. This allows all the parameters of every cook to be programmed in, for every batch on every shift.

“The cooker has been proved to substantially increase productivity while being extremely versatile, and gives excellent results on everything from sliced bacon, to quiche, chicken portions and sausages,” continues Ian. “We can design the cooker to exactly meet the customer’s requirements for capacity and product finish.”
